“CHEESY” BROCCOLI SOUP – Try this delicious vegan alternative!
Serves 8
2 c cashew pieces (8 oz.)
1 T salt
1 c nutritional yeast flakes (available at Whole Foods)
1 T onion powder
1 T garlic powder
1 t dill weed
1/2 c pimentos
7 c water
8 c chopped broccoli heads and stems (4 stalks)
1. In a blender, add the first 7 ingredients and half of the water.
2. Blend on high 2-3 minutes, until creamy. Pour the mixture into a pot. Add the rest of the water and the broccoli.
3. Cook over medium-high heat, stirring constantly, until slightly thickened and broccoli is tender (20-25 minutes).
4. Enjoy!
